WHere is a simplified take on a beverage featured on a new cocktail list. It's a large-volume pre-mixed that's packed full of flavours associated with holiday season, which makes it ideal for a festive gathering. Save the extra syrup you can use for brunch beverages, sweets, or to make another batch of bikinis.
The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Put all the ingredients inside a pot, bring to a simmer, agitating to dissolve. After that, take off the stove and let it to reach room temperature entirely. Transfer into a sealable bottle, seal and store chilled, it can be stored for about four weeks.
For the Cocktail Base: Mix all the liquid ingredients in a big jug, let it rest for 60 minutes, then pass it through preferably using a fine cloth, to ensure it's completely strained.
For serving: Pour 85ml of the cocktail base into a stirring glass containing ice, and stir lightly for a minute to cool it down. Filter to a frosted cocktail glass or equivalent, top with a few cranberries adding the final touch using a quick spritz of the essential oil above the glass.
